Ingredients

  • flour - 1 1/5 cups (300 g)
  • baking powder - 1 tbsp
  • salt - 2 pinches
  • butter - 7 oz (200 g) cold, cubed
  • sugar - 2/3 cup (160 g) crystal
  • vanilla - 1 powder
  • eggs - 1
  • apples - 2 lb (1 kg) sour
  • lemons - 1 tbsp juice
  • sugar - 1 tbsp (15 g)
  • cinnamon - 2 tsp
  • raisins - 1/5 cup (60 g) yellow
  • almonds - optional

How to make

Sift the flour and mix it with the baking powder, sugar, salt, vanilla and mix. Add 3/4 of the egg and butter cubes.

Mash with a fork to get crumbs and knead a smooth and firm dough by hand. Wrap it in foil and leave in the refrigerator while you make the filling.

Peel the apples and cut them into cubes. Stir them quickly with lemon juice to prevent browning and add the sugar, cinnamon and raisins. I like to add and sliced almonds. Grease a baking dish with removable sides.

Roll out 3/4 of the dough and place it in the tray. If necessary, trim away any excess dough that sticks out.

Pour the filling inside and cover with the remaining 1/4 of the dough. The more difficult option is to cut strips about 3/4″ (2 cm) wide from the rolled out sheet and arrange them like a grid on top.

Coat the top of the pie with egg and put to bake in preheated oven at 360°F (180 °C) for about an hour.
