Ingredients

  • lamb offal - 17.5 oz (500 g), boiled
  • salt
  • carrots - 1
  • green onions - 1 - 2 stalks
  • green garlic - 1 stalk
  • rice - 1/2 cup
  • broth - 6 1/5 cups (1.5 L) strained from the offal
  • oil
  • spearmint
  • black pepper
  • thickening agent
  • eggs - 1
  • yoghurt - 2 tablespoons
  • flour - 1 tablespoon

How to make

Pour the oil in a pot. Once it heats up, braise the chopped carrot, onion and garlic in it. After a few min. add the chopped offal and rice.

Add the spices and pour in the broth. Leave it to boil until the vegetables soften. Beat the egg with the yoghurt and flour. Put it on the stove and pour in some of the broth.

Boil the thickening agent for 5 min. and return it in a thin trickle to the soup. Remove from the stove and serve hot.
