Bake the peppers and eggplants, peel them and chop them into medium-sized pieces.

Chop the onion heads and green onions coarsely, grate the zucchini, carrots and tomatoes coarsely.

Braise the chopped onion heads. To them add the carrots and braise another 2 min.

Then add the zucchini and green onions and after another 2 min. add the tomatoes, peppers and eggplants.
