"As per tradition, make a lean soda pita for the holidays, tear into pieces and hand them out to the whole family."

Ingredients

  • carbonated water - 1 2/5 cups (350 ml)
  • oil - 5 tbsp
  • lemon juice - 2 tbsp
  • sugar - 2 tsp
  • salt - 1 tsp
  • baking soda - 1 tsp
  • baking powder - 1 tsp
  • flour - 2 1/2 cups (600 g)
  • oil - 1 tbsp, for smearing on top

How to make

Pour hot carbonated water in a bowl. Stir the baking soda and baking powder in the lemon juice to effervesce, add them to the water.

Add the oil, salt and sugar, stir everything with a fork and add the flour. Once it becomes difficult to stir, pour it onto a floured surface and knead a smooth dough.

Set aside a piece the size of an orange for the figurines. Smear the rest with oil and form a round pita with your hands. Place it onto baking paper in a 10 1/4″ (26 cm) form.

From the smaller piece, tear off pieces to make a bird, cross, sun, wheat stalks, horseshoe. Stick them along the pita's top and poke holes with a fork in several spots.

Heat the oven to 360°F (180 °C) and bake the pita on the middle element about 35-40 min. Take it out and cover with a towel. It's suitable for Christmas Eve, happy holidays!
