"Grandma always used to say that if you don`t eat your Healthy Quinoa Meatballs you`re going hungry."

Ingredients

  • quinoa - 2/5 cup (100 g)
  • eggs - 1
  • onions - 1 head
  • savory - 1 tsp
  • thyme - 1/2 tsp
  • dill - 1/2 tsp
  • parsley - 1/2 bunch, finely chopped
  • breadcrumbs - 2 tablespoons
  • black pepper
  • salt
  • feta cheese - 2 oz (50 g) crumbled
  • flour - 1/2 cup
  • oil - for frying

How to make

Boil the quinoa in water (1 cup quinoa to 2 cups water ratio) for about 15 min. It'll be ready once it swells, turns transparent and takes in all the water. In the meantime, cut the onion finely.

Add it to the now cooled quinoa, along with the egg, feta cheese, breadcrumbs and the spices.

Stir well and form meatballs. Roll them in flour and fry in highly heated oil. They'll be ready once they gain a nice golden crisp on both sides.

Arrange the ready meatballs onto paper towels to drain off the excess oil. Serve with a scoop of dairy salad.

Notes: You can bake the meatballs in the oven so that they're even healthier.

Preheat oven to 390°F (200 °C), put baking paper in a tray and bake the meatballs to a nice golden crisp.
