If you bought frozen calamari from the store, first let them defrost. Then pour boiling water over them and leave them inside for no more than 1 minute.
Take them out and clean them, then cut them into rings of the desired size. Optionally. you can season them with salt, black pepper or other spices.

Beat the egg whites very well with a pinch of salt. Roll the calamari slices in flour and then dip them in the egg whites and mix them gently by hand. Put a few of them in a good amount of very hot oil and fry them for about 1 minute.
The fried calamari are left onto kitchen paper, in order for it to absorb the excess oil, after which they are ready for consumption.
