Lunch is in the middle of our hectic day, which is why it must fill us with energy and strength for the rest of the day. Eating semi-processed foods and fast food is no longer an option. It is best to eat something healthy and cooked. The quick preparation of lunch, in only 30 min, happens ever more easily with the wide variety of recipes.
A delicious lunch for less than 30 min.
Puff pastry with tomatoes, mushrooms and mozzarella
This recipe only takes 15 min. to make.
Ingredients: 14 oz puff pastry, 2 tomatoes, 4 champignons, 5.5 oz mozzarella, 4 pinches of basil, 1 egg, salt.
Preparation: Cut out 8 rectangles from the puff pastry. On top of each, arrange a slice of tomato, a slice of champignons and a slice of mozzarella. Smear whisked egg on top, sprinkle with dried basil and salt and bake for 15 - 20 min. in a preheated oven until fully cooked.
Broccoli with dairy sauce
Preparation: Rip up the broccoli into florets. Blanch them in salted boiling water. Remove, drain them and place them in the boiling milk that contains the crumbled blue cheese. Let it simmer until the cheese melts completely. Dilute the flour in cold water and pour it in a thin stream to the dish, while stirring continuously. Once the sauce thickens enough, remove from the stove. Add the garlic that has been crushed with salt and black pepper to it and stir.
Quick onion porridge
Preparation: Chop the onions and parsley finely. Stew the onions in the heated oil briefly, then sprinkle with flour and stir. Whisk the eggs and mix with the milk. Pour the resulting mixture into the dish. Stir and season with salt and black pepper. Stir the porridge continuously until it thickens. Once this happens, remove from the stove. To it, add the finely chopped fresh parsley and stir. Serve the onion porridge hot, sprinkled with paprika.
Using this same fast and easy method you can make other types of porridge - using spinach, dock, nettle, saltbush, sorrel or some leafy vegetables. The eggs and milk can be substituted with liquid vegetable cream for cooking.
Egg and beans sandwich
Ingredients: 2 eggs, 2 tbsp of olive oil, 4 tbsp of beans, 4 slices of bacon, 2 leaves of iceberg lettuce, 1 pinch of paprika, 1 pinch of black pepper, salt.
Preparation: Cut up the bacon into tiny bits and fry in the olive oil. After a minute, add the boiled beans to it. Season with salt, paprika and black pepper to taste. Remove this sandwich stuffing from the stove and then fry the eggs in the olive oil as well. Cut the buns or bread into halves, which will be used to make the sandwich, and place iceberg lettuce leaves in them, the stuffing of bacon and beans and the fried egg at the end. Complete the sandwiches and serve immediately.
Each of the proposed dishes, with a garnish of light salad, will satisfy your lunchtime feelings of hunger for quite some time.
