Winter is the time when it's almost impossible not to cook warm soups to help us get warm during the coldest days of the year. No matter if they're meat, vegetable, dairy or even fruit, it's best to serve them warm during wintertime.
Unfortunately since winter isn't as over as quickly as we'd like, our ideas for winter soups quickly run out as well.
So let us now offer you 3 a bit more nonstandard soup recipes which are suitable for making during the winter season:
Sweet Soup with Apples
Preparation: Peel and dice the apples, boil them until softened and add the lemon juice, cinnamon and a little sugar if desired, to them.
Mash everything together and strain it, make a roux from the flour and butter in a separate container. Add the apple mixture and 3 cups of water to the roux. Leave the soup to boil, season it with allspice and cloves and serve it with croutons.
Cream of Pumpkin Soup
Ingredients: 17.5 oz pumpkins, several bunches of leeks, 1 veal broth cube, 2/5 cup cream, 1 lump of butter, salt and black pepper to taste.
Preparation: Bring the veal broth to a boil and to it add the chopped round slices of leeks and diced pumpkin.
Once they soften, mix and mash the soup together and to it add the butter, cream and remaining spices. If you like you can garnish it with finely chopped parsley or ramsons.
Pork Soup with Dried Peppers
Ingredients: 10.5 oz pork, 6-7 dried peppers, 4 garlic cloves, 1 onion head, 1 carrot, the juice of 3 tomatoes, 2 tbsp rice, salt, black pepper and savory to taste.
Preparation: Wash the pork, cut it and put it to boil, while also removing the foam. After about 90 min. add the finely chopped onion, carrot and peppers to it.
After another 15 min. add the rice, tomatoes and finely chopped garlic cloves. Season the soup with salt, black pepper and savory to taste and it's ready now to serve.
