The red meat is sauteed with very little fat, which only prevents the pork from sticking to the surface of the pan.
The fast cooking and the high temperature give a specific appetizing taste to each bite of the meat. The spices are added shortly before or after the heat treatment. They additionally give the pork an even more spicy look and taste.
1. Cut the meat into small pieces (about 3 cm). The smaller pieces are cooked much faster than larger pieces of pork.
2. Heat a deep frying pan on medium to high heat. Add 2-3 tablespoons of rapeseed oil or olive oil, beforehand, to cover the surface of the pan. Then, if desired, add onions, garlic or other aromatic vegetables to the fat, 30 to 45 seconds before adding the meat.
3. Place the pork bites in a well-heated pan. Do not overfill the pan with too much meat. There should be one layer of bites and at a distance of 2-3 centimeters from each other. In order to saute them, you need to constant stir them.
So it is necessary to turn and stir the pieces every 10-15 seconds until they get a brownish color on the outside. Pork requires no more than 3 to 5 minutes to fully cook, of course if they aren't that thick.
4. Remove the pan from the heat when the pork bites are ready. About 30 seconds before that you can add your favorite spices. In this case, soy sauce is extremely suitable. Take out the pork bites and garnish them with the dishes you've prepared beforehand. Do not leave them in the pan, as they will continue to cook and may become dry and tough.
