How to make homemade mozzarella

The first thing you should know is that the most delicious mozzarella is made from buffalo milk. However, if you can’t get such milk, then you can rely on cow's milk.

It is not very difficult to make mozzarella, here is what products are needed: Two liters of fresh unhomogenized, uncooked milk, ¼ tea cup lukewarm water, 1 ½ tsp citric acid, 2 ml of rennet, ¼ tsp salt, as desired.

Preparation: Put milk in a suitable pan. Dissolve the citric acid in water and add it to the milk. Heat it to 30 degrees. At this temperature, it must curdle.

Add the yeast and mix well. Heat over low heat until the temperature becomes 40 degrees. During this time, stir constantly. Remove the pan from the heat and leave to stand for about 15 minutes. During this time, take out the whey from it.

The resulting mixture is curds, it needs to be strained through a cheesecloth. Squeeze as much whey through it as possible.

The resulting ball is placed in a bowl suitable for the microwave and heat it for a minute.

Strain the liquid and breakaway dough that comes to bread and knead until it forms typical mozzarella strings. If you will put salt in, now is the time. If the cheese is hot, it is best to wear plastic gloves. The mixture should be gooey when hot and should become shiny.

Divide the cheese into two balls and drop them into ice water to set. Once cool, the mozzarella is already suitable for consumption. It is best stored in a tightly closed container for up to 4 days.

If you want a soft mozzarella, knead the mixture for a short time. Beautiful mozzarella depends on the quality of the yeast.
