Juicy chicken with celery and a taste of garlic
Products Required : 1 whole chicken - about 3.5 lb - cleaned on the inside, salt and black pepper to taste, 1 tablespoon of powdered garlic or to taste, 1/2 cup margarine, 1 celery stalk with the leaves removed.
Preparation : Preheat the oven to 347°F (175 °C). Place the chicken in an oven dish and season generously inside and out with salt and pepper. Sprinkle the inside and top of the chicken with garlic powder. Put 3 tablespoons of margarine in the chicken cavity. Arrange the remaining margarine around the chicken in the dish. Cut the celery into three or four pieces and place it as a filling in it as well. Bake without a cover for 1 hour and 15 minutes in the preheated oven. The baked chicken is removed from the heat and the melted margarine and broth from baking are poured over it. Cover the dish with aluminum foil and let it sit for about 30 minutes before serving.
Mayonnaise chicken with parmesan and rosemary
Products Required : 1 whole chicken - cut into 6 pieces, 1 cup mayonnaise, 1/2 cup grated parmesan cheese, 2 cloves of garlic - crushed, 1 tablespoon finely chopped garlic, fresh rosemary, 1 teaspoon of salt and freshly ground black pepper to taste.
Preparation : Preheat oven to 347°F (175 °C). Mix the mayonnaise, garlic, rosemary, salt and pepper together in a bowl. Place the chicken pieces in a baking dish, distribute and smear the mayonnaise mixture over the chicken and sprinkle with parmesan. Bake until the juices that flow from it become clear - about 1 hour and 10 minutes. The chicken should no longer be pink in the middle.
Caribbean chicken with ginger and cinnamon
Products Required : 1 whole chicken (3.5 lb), 1 and 1/2 tablespoons fresh lemon juice, 3 1/3 tbsp rum, 1 tablespoon brown sugar, 1/4 tsp cayenne pepper, 1/4 tsp ground cloves, 1/2 teaspoon cinnamon, 1/2 tsp ginger – ground, 1 teaspoon black pepper, 1/2 tsp salt, 1/2 tsp of dried thyme leaves, 1 tablespoon vegetable oil.
Preparation : Preheat oven to 329°F (165 °C). In a small bowl, mix the lemon juice, rum and brown sugar and set it aside. Combine the cayenne pepper, cloves, cinnamon, ginger, black pepper, salt and thyme leaves. Brush the chicken with oil, then with the mixture of spices. Place it in a baking dish and bake for about 90 minutes until the juices become clear. Baste the chicken every 20 minutes with its own sauce during cooking. Leave it aside for 10 minutes before cutting it.
Roasted "Moho" chicken with cumin
Products Required : 1 whole chicken (5.5 lb) - cut into pieces, 1/2 cup extra virgin olive oil, 1 and 1/2 teaspoon cumin, 1 and 1/2 tsp salt, 1/2 tsp dried oregano, 2 tablespoons diced garlic, 3 tablespoons lemon juice, 3 tablespoons orange juice
Preparation : Heat the olive oil in a small pan on medium-high until blazing hot. While the oil is being heated, crush the cumin, salt, oregano and garlic together into a paste in a bowl. Then pour the hot oil in over the spices. Let the mixture cool slightly. Add the lemon juice and orange juice and stir well. Place the chicken pieces in a large resealable plastic bag for baking, pour the marinade into the bag and shake it to ensure even sticking and coating of the mixture to the chicken. Leave it in a refrigerator for at least 4 hours or overnight. Preheat oven to 374°F (190 °C). Place the marinated chicken in a pan. Bake it until it is no longer rosy around the bones and its juices become clear - about 1 hour.
Appetizing chicken with butter, lemon zest and coriander
Products Required : 1 whole chicken (about 4.5 lb), 1 cup butter - melted at room temperature, 1 whole head of garlic - crushed, the zest of 3 lemons, zest of 1 orange, 2 tbsp chopped chives, 1 tbsp sesame oil, 1 tbsp finely chopped fresh thyme, 1 and 1/2 tsp salt, 1 and 1/2 tsp ground black pepper, 1 tsp ground coriander.
Preparation : Wash the chicken and let it air dry for 30 minutes. Preheat oven to 302°F (150 °C). Put the butter, garlic, lemon and orange zests, chives, sesame oil, thyme, salt, pepper and coriander in a bowl and mix well. Loosen the skin over the chicken breasts and thighs with your fingers, rub the whole chicken generously with the butter mixture, including the insides. Put some under the loose skin as well. Place chicken in a baking pan, breast side down.
Cover it with aluminum foil and seal it well to the pan. Bake in a preheated oven for 1 hour. Reposition the chicken at that point so that its chest is facing up. Finish cooking for about another 20 minutes. Raise the oven temperature to 401°F (205 °C). Continue to cook the chicken until the skin becomes golden brown, about 10 minutes. Before you cut it, wait another 10 minutes.
