Cake with Apricot Compote
Preparation: Dissolve the gelatin in a cup of cool water. Leave it for half an hour to swell. Then, add another cup of water to the gelatin and put the mixture on the stove - in a water bath so that the gelatin melts. The mixture must not come to a boil.
Once the gelatin melts, remove from the stove and pour in the juice from the 2 compotes. Leave them in the fridge to start to gel. In a bowl, beat the butter into foam, add the eggs and sugar, the flour in small portions at a time. Pour the layer in a greased cake form and bake in a moderate oven.
Once the layer cools, arrange the fruits from the compote on top and pour on the mixture that has started to gel. Then place in the fridge once again to set.
The next recipe idea is for an easy-to-make cream. It comes out to be light and tasty. For it you need to grate the rinds of 2 lemons, add 2 cups (0.5 L) of water to them and put on the stove.
Let the mixture come to a boil, then let simmer for 10 min.
Next, add the lemon juice from the lemons and 1 1/5 cups (300 g) of sugar. Stir and add 3 1/3 tbsp (50 g) of gelatin that you've mixed with cold water and then melted in a water bath. Stir well and pour part of the gelatin into cups, put a jam of your choice on top, cream once again and sprinkle generously with finely chopped almonds.
Blueberry Pie with Orange
For the cream: 3 1/3 tbsp blueberries, 2 1/2 cups of yoghurt, the juice and rind of a lemon, 2 1/3 tsp gelatin, 1 2/3 tbsp sugar.
Preparation: Separate the yolks and whites from 3 of the eggs. Combines the yolks with the 1 remaining egg and 3 1/3 tbsp of sugar, the juice and rind of the orange and beat. Beat the whites into snow with the remaining sugar. Mix together the yolks and whites and add the flour that you've mixed with the baking powder.
Stir the mixture carefully, then pour it into a suitable form and bake the layer. Mash the blueberries for the cream with a fork and stir with the yoghurt. Add the juice and rind of the lemon, as well as the sugar and pour them over the baked layer.
