1. Mince Meatball Soup with Rice
Ingredients: 10.5 oz mince, 5 tbsp rice, salt and black pepper to taste, 1 carrot, 1 onion head, 1 piece finely chopped celery, 1 tsp butter, 1 bay leaf, 1 tbsp flour, 2 tbsp yoghurt, 1 egg, 1 tbsp lemon juice.
Preparation: Cut the celery, carrot and half the onion finely and pour water over them. Knead the remaining onion, the mince and half the rice, season with salt and black pepper and form small meatballs from it. Drop them in the boiling broth and after about 20 min. add the rice to it. Add the bay leaf, salt and black pepper to taste. Once everything is ready, thicken it with the yoghurt, flour and egg and finally season with the lemon juice and butter.
2. Mince Meatball Soup with Potatoes
Preparation: Season the mince with the cumin, salt, black pepper and savory. Form small meatballs from it, roll them in flour and drop them in boiling water. Chop the carrot, onion and peppers finely and add them to the soup. After about 10 min. add the diced potatoes and once everything softens well, add the vermicelli. Sprinkle on salt and savory to taste.
3. Fish Meatball Soup
Ingredients: 14 oz fish mince, 1 carrot, 1 onion head, flour for rolling, 2 potatoes, 3 tbsp oil, 1/2 tsp ginger, 2 garlic cloves, several bunches of parsley, salt, black pepper and lemon juice to taste.
Preparation: Pour in the diced carrot and onion into boiling salted water. After about 5 min. add the diced potato, ginger, oil and chopped garlic. Season the fish mince with salt and black pepper and form meatballs, roll them in flour and drop them in the broth. Finally, add the lemon juice, spices to taste and finely chopped parsley.
