Austrian Gluten-Free Apricot Dumplings
Preparation: Place the washed potatoes in boiling water for 30 min., peel and mash them. Halve the apricots, remove the pits and put a sugar cube in their place. Put the halves together again. To the potatoes add the whipped eggs, gluten-free flour, 2 tbsp melted butter and stir everything.
Season with salt and cinnamon. Cover each apricot with this mixture to get nice ball. Boil salted water in a large container and boil the dumplings about 15 min. Once they begin to rise to the surface, take them out, drain and serve.
Preparation: Make a dough from the crumbled cookies and butter, cover the bottom of a cookie tray with it. With a mixer beat the grated lemon rinds and their juice (save a few lemon slices for decoration), the egg yolks, vanilla and sugar. Once the mixture begins to bubble, add the milk. Pour this mixture over the dough and bake in a preheated 356°F (180 °C) oven. Once the pie is ready, decorate it with the lemon slices rolled in the sugar.
Biscuits with Pears
Preparation: Peel the pears, remove the seeds and blend them with the lemon juice and egg yolk. In a bowl mix the flour and butter, mash them with your fingers, add the powdered sugar and pear mixture. Stir everything well and leave the dough in the fridge for 1 hour. Once ready, roll it out flat and using cookie cutter shapes cut out cookies, bake them until pink in a preheated 356°F (180 °C) oven.
