Spicy Potato Salad
Ingredients: 12.5 oz potatoes, diced and boiled, 2 boiled and diced eggs, 2 1/3 tbsp olive oil, 2 tbsp vinegar, 1 finely chopped red pepper, several bunches green onions and parsley, salt and white pepper to taste.
Preparation: Combine the potatoes, eggs, pepper, olive oil and vinegar, stir everything and leave it in the fridge for 30 min. Finally, add the finely chopped greens, season with salt and white pepper, stir once again and serve.
Potato Salad with Apples
Preparation: Make a dressing from the mayonnaise, mustard, vinegar and finely chopped parsley. Boil the potatoes, dice them and mix them with the beetroot, baked ahead of time, the diced apples and mushrooms. Pour the dressing over everything, season to taste and serve sprinkled with a little parsley.
Potato Salad with Chorizo
Ingredients: 28 oz fresh potatoes, 2 red onion heads, 9 oz chorizo, 7 tbsp vinegar, 7 tbsp olive oil, 1 tbsp mustard, several bunches fresh parsley, several bunches fresh onions, 1 dried chili pepper, salt to taste.
Preparation: Wash the potatoes well, boil them and cut them into slices. Cut the chorizo into slices also and braise them on both sides in the olive oil. Leave everything to cool.
Next, combine both types of chopped onions and parsley with half the vinegar and add them to the potatoes. Add the chorizo also. Briefly heat the remaining vinegar and all of the other spices, then pour this mixture over the prepared potato salad.See more
