Ingredients: 4/5 cup hazelnuts, 1 cup powdered sugar, 4 egg whites, 2 vanilla packets.
Preparation: Beat the egg whites with the sugar in a water bath. To this mixture, add the ground hazelnuts and stir everything lightly. Put the mixture in a pastry bag and form meringues with a suitable tip; bake them in buttered baking dish in a preheated oven on low heat.
Ingredients: 1 2/5 cups hazelnuts, 4/5 cup sugar, 3 eggs, 1 lemon.
Preparation: Grind the hazelnuts. Wash the lemon, squeeze out its juice, grate its peel. In a bowl, mix the hazelnuts, lemon juice, lemon peel, sugar and eggs. Knead everything well until you get a soft dough. Roll it out and cut out different forms using cookie cutters. Arrange them in a buttered baking dish, smear them with whipped egg yolk and sprinkle with sugar. Bake in a preheated 350°F (175 °C) oven.
Hazelnut Cream with Ice Cream
Ingredients: 1 2/5 cups hazelnuts, 1 2/5 cups powdered sugar, 1 2/3 cups butter, 4/5 cup chocolate ice cream.
Preparation: Grind the hazelnuts and mix them well with the sugar. Separately, whip the butter with a mixer, add the hazelnut mixture to it, stir again and leave it to cool in the fridge. After a few hours, pour the cream into decorative glasses, put a scoop of ice cream on top and garnish with cream or fruits if desired.
