How to cook
For the meatballs: to the mince add a little rice, the finely chopped or coarsely grated onions. Add the savory and a little black pepper (the soup is for kids after all; for adults add freshly ground black pepper before serving). Mix the ingredients and shape meatballs, arrange them in a tray sprinkled with a little flour.
Put the vegetable broth to come to a boil in a suitable pot. In it pour the onions, carrot, pepper and mince meatballs.
10 min. before removing the soup from the stove, add the vermicelli and finally the finely chopped parsley.
Thicken it with beaten together egg yolk and yoghurt. Temper the egg-yoghurt mixture with some broth form the soup.
Add the butter to the soup once it's down to a moderate temperature, in order to retain its vitamins.
Optionally, garnish with lemon juice and serve with whole grain bread.
