Peel, cut the potatoes into pieces about 1/2″ (1 cm) and wash them well. Pour them into an oiled tray. Stir well with the salt.
Pour on water, about 1 finger's worth and bake in a preheated 392°F (200 °C) oven.
Bake until ready and until all of the water evaporates. In the meantime, stir the cooking cream with the grated cheese and black pepper.
Once the potatoes are ready, take them out of the stove and pour on the cream mixture. Bake until they obtain a golden crust.
