How to cook
Cut the nectarines into crescents. Mix them with 2 tablespoons olive oil, a bit of sugar and starch and spread them in a buttered form.
Beat the eggs with the remaining sugar and add the yogurt, flour, essence, baking powder and a pinch of salt. Optionally, you can add citrus juice for a more interesting flavor.
Pour the cake mixture over the nectarines. Put the cake to bake in a 356°F (180 °C) oven until dry.
When ready, invert it and sprinkle it with powdered sugar when cool. Optionally, you can first pour the cake mixture into the oven dish and then top it with the nectarines.
