How to cook
Pre-boiled potatoes are peeled and cut into slices or cubes. Heat oil and saute the crushed onions and peppers, and once softened add finely chopped tomatoes.
Add the potatoes to the vegetables and leave to stew, if necessary top up with some water.
Add the beaten eggs and crumbled cheese. Allow the pan to cook the eggs and season to taste with salt, pepper and paprika, and crushed parsley.
