How to cook
Sift the flour, baking powder and salt. Beat the eggs with the oil and sugar to a fluffy cream. Add the flour, milk, essence and homogenize, without beating too much.
Pour the mixture into prepared muffin forms - a tray laid out with muffin holders, slightly oiled. Pour the mixture into the holders, 2/3 of the way up into each.
Put a small spoon of thick jam in the middle of each muffin. If it's a bit runnier it will sink to the bottom and the muffins aren't going to turn out well.
Bake the ready muffins in a 356°F (180 °C) oven about 25 min. or until ready. Smear the baked muffins with a dab of butter on top, make a glaze if you like as well.
