Smear the lamb leg generously with this, pour the rest into a tray. Add 1 cup water, cover tightly with foil and bake in a preheated 482°F (250 °C) oven for 30 min.
Then lower the heat to 302°F (150 °C) and bake another 20 min. Shortly before taking the leg out of the oven, remove the foil and leave it to crisp.
