How to cook
Sauté the finely chopped leeks in hot oil, and after they soften, add the chopped garlic. Add the cleaned and coarsely chopped spinach and stir gently until it shrinks. Add the chopped olives and add presoaked in water and drained bulgur.
Mix and add 1 cup of water. Once the water is absorbed, pour in a little more and boil the dish finished. Finally, season with salt and pepper. Remove from the heat and let the bulgur with spinach stew under a lid for 20 minutes.
Instead of boiling, you can also bake the dish in a tray in the oven with the necessary amount of liquid.
