Stir the spices and salt and rub the meat carefully and thoroughly.
Put it in a deep tray, the bottom of which you've poured a little water and the wine.

Cover with aluminum foil and bake at 302°F (150 °C) for 3 hours. Take them out and pour the resulting sauce over the meat, return to the oven for 1 more hour. Remove the foil and leave in the oven for another 20 min.
