Wash and clean the bell peppers, green tomatoes, cauliflowers, carrots, cabbages and celery. Mix the water with the vinegar, salt, sugar, black pepper, allspice, bay leaf and put to boil in a large container.
Put the cleaned peppers in the boiling marinade and keep them there until it comes to a boil again, then take them out. Repeat this process with the green tomatoes after poking holes in them with a fork first.
Put the green tomatoes at the bottom of the jars, then add the carrots, cleaned and cut into round slices, place the bell peppers on top, pieces of cauliflower in the middle and chopped cabbage at the very top. Place a little garlic and chopped celery in between these layers.
Add the oil to the remaining marinade, pour it into the jars.
Close them and sterilize for about 10 min.
