How to cook
Wash the tripe well, with plenty of cold water, then soak for 1 to 2 hours in salted water, rinse, scald with boiling water and immediately scrape from both sides, wash it again and put to boil in salted water, when soft- remove it and cut it into pieces.
The soup continues to boil over high heat for 15 to 20 minutes and add a little oil, red pepper and a glass of milk.
Put the tripe back into the pan and remove it from the fire.
Serve with cooked separately crushed garlic with vinegar.
