Cut the cheese into slices about 1/2″ (1 cm) thick. Put away for 30-40 min. in the freezer to harden.
Dip each piece of cheese gradually in cold water, flour, beaten eggs and finally breadcrumbs, then braise on both sides in highly heated oil.
Leave the fried cheese to drain from the excess oil onto a napkin or paper towel, then serve with a seasonal salad.
