Clean the innards of the sprat and remove their heads. Wash and dry them. Salt.
Mix the flour with the paprika in a bowl.
Heat the tray up (its bottom needs to be absolutely dry), sprinkle with olive oil.
Roll each fish in the dry mixture and arrange in the tray without overlapping them.
Bake in a preheated 392°F (200°C) oven to a golden crisp.
