How to cook
Chop the leeks and braise them. Push them aside and add the feta cheese, which you've cut into thick slices.
Once baked on one side, flip over to the other and braise on that one as well.
Transfer everything to a tray. Add the tomatoes, salt and stir slightly.
Put in a preheated 392°F (200 °C) oven and bake for about 20 min.
Take it out, break the eggs on top and return to the oven until the eggs are ready.
It's best if the tomatoes are left whole and slightly mashed but I had ground ones!
