In a bowl, mix together the peas, grated cheese and diced carrot, potatoes and eggs.
Salt them to taste. Spread out this mixture along the middle of the rolled out mince. Using the baking paper, wrap it into a roll and transfer to a suitable tray. Cut it into slices, 2 fingers wide, but not all the way through.
Pour the oil, tomato juice, thyme and black pepper in a pan. Let simmer for a bit, then remove from the stove and pour it over the roll.
Bake in a preheated 356°F (180 °C) oven for 40-45 min.
