How to cook
Grate or chop the apples into small pieces. Mix them together with the grated pumpkin, pre-soaked in water or milk, golden raisins and sugar.
Put them on the stove and stir until lightly caramelized. Add to them half the butter, cinnamon, cream and a pinch of ginger and wait until completely caramelized.
Melt the butter, smear 2 phyllo pastry sheets with it and distribute the filling along their length. Sprinkle with walnuts, more sugar if desired, wrap into a roll and arrange these rolls in a large greased baking dish.
Sprinkle the top with a little sugar. Put the pumpkin pastry to bake for about 20 minutes in a preheated 356°F (180 °C) oven.
