Wash and chop the peppers into coarse pieces. Pour the oil into a deep pot with a wide bottom.
Add the peppers and stir because there's a danger of burning them. Sprinkle the salt and stir again.
After frying them until about halfway done, turn the stove off and sprinkle with the sugar. Taste them and if needed add more salt, season with spices of your choices.
While still hot, fill the jars, top off with the oil left over in the pot.
Turn the jars with their caps down, after 15 min. you can flip them over again.
You can use these fried peppers for salads or as a garnish to dishes.
