Braise the coarsely chopped onions, salt them a little, add a pinch of black pepper. Add the coarsely chopped peppers.
Dice 2 of the tomatoes and add them to the other ingredients and braise.
Before the other tomatoes soften, poke holes in them lightly, add the eggs, season and cover the pan, leave for about 10 min. on medium heat so that the eggs remain as runny as possible.
Decorate the cooked dish with fresh, chopped parsley.
