Tasty Pitas with Mince and Cheese

Ingredients

  • water - 2/5 cup (100 ml)
  • yeast - 1 1/3 tbsp (20 g)
  • ayran - 2/3 cup (150 ml)
  • sugar - 1 pinch
  • salt - 1 tsp
  • flour - 2 1/2 cups (600 g)
  • eggs - 1 yolk
  • mince - 10.5 oz (300 g)
  • savory - 2 pinches
  • parsley - 5 bunches
  • black pepper - 1 pinch
  • salt - to taste
  • cumin - 1 pinch
  • sesame seeds - for sprinkling, 1 tablespoon
  • cheese - 3.5 oz (100 g)

Preparation

Stir the yeast in the cooled water with a pinch of sugar and leave it to effervesce.

Knead a soft dough. Leave it to rise for 30 min., then divide it into 4-6 parts.

In a bowl, knead the mince, flavor it with the spices, divide it into as many parts as you have doughy parts.

With oiled hands, shape them into pitas the size of a plate, fold the edges inward to make a border. Distribute the mince on top. Smear the edges with beaten egg yolk, sprinkle on the sesame seeds.

Bake in preheated 338°F (170 °C) oven for 30 min.

Shortly before taking them out, sprinkle with grated cheese and return to the oven for 10 min. until reddened.

They're incredibly delicious with salad.
