Cut the pork neck into thick steaks.
Make cuts along the edges, tenderize just slightly. In a bowl, mix all of the spices and stir well. If needed, add 2 tbsp water or beer.
Add the steaks and mix well, cover with foil and leave to marinate for 24 hours.
Bake on a heated grill.
