Ingredients

  • flour - 2 lb (1 kg)
  • yeast - 1 cube
  • salt - 2 tablespoons
  • sugar - 1 cup (250 g)
  • milk - 2/3 cup (160 ml)
  • butter - 1/5 cup (70 g)
  • sunflower oil - 1/5 cup (70 ml)
  • eggs - 4
  • lemon zest
  • water - 2/5 cup (100 ml)

Preparation

Prepare the ingredients. Activate the yeast by adding it to the warmed milk, along with 1 tbsp sugar and 1 tbsp of the flour.

Dissolve the salt in the water. Mix the eggs with the sugar and beat with the sunflower oil.

Heat the mixture in a water bath at 104°F (40 °C) while stirring nonstop until fully homogenized. Add the zest before kneading.

Knead a dough from them and the sifted flour. Leave to rise until doubled in volume (60 - 120 min.)
