In a pan with a little oil, fry the chickpeas. Cut the vegetables into small cubes, chop the onions finely and mash with a little salt.

In a large bowl, mix everything and add the apricots, chopped into small pieces.

Stir lightly, flavor with vinegar, lemon juice and salt to taste.
