Beat the egg whites with a pinch of salt into powdered snow and gradually add 1 tablespoon sugar.
Stir in the lemon rind and starch. In a meat grinder or food processor, grind the almonds to a sandy consistency with 1 tablespoon sugar. Add the almond mixture to the egg whites with the yellow confectionery dye.
Beat with a mixer briefly. Lay out a tray with baking paper and form the meringues on top.
Put to bake in a preheated 356°F (180 °C) oven until light golden.
