Ingredients

  • beans - 7 oz (200 g) mature
  • pork - 7 oz (200 g) smoked ham
  • carrots - 1 small
  • celery
  • parsley
  • fat - 2 2/3 tbsp (40 g) lard
  • flour - 4 2/3 tbsp (40 g)
  • paprika
  • onions - 1/2 small head
  • cream - 3 tablespoons sour
  • salt

Preparation

Soak the beans for day and boil them the next day in the water, where you soaked it. As it boils, add the ham and boil it until soft.

The meat is removed and the broth thickened with a light roux made from fat, finely chopped onion, flour and paprika.

Stir the broth and let it simmer. Shortly before the end, add the diced vegetables. Before the presentation of the soup, add diced smoked ham, cream and add salt to taste.
