Soak the beans overnight in water and salt. Wash well and rub them by hand to remove the scales. Put the beans on high heat to boil and meanwhile chop the onions, peppers, carrots and tomatoes into small cubes and pieces.
Once the water comes to a boil, add 3 tablespoons vegetable oil, a few sprigs of parsley, the spearmint, onions, tomatoes, carrots and peppers in it and stir. If necessary, reduce the heat and let it boil.
Boil for about an hour and a half to two until the beans are ready, while stirring occasionally.
Finally- add salt and a little more spearmint. Serve with chopped parsley.
