Ingredients

  • bacon - 22 lb (10 kg)
  • salt - 2 lb (1 kg)
  • leeks - 1 - 2 stalks
  • bay leaf - 7 - 8
  • paprika

Preparation

At the bottom of a dry container (preferably wooden), put a 1/8" (3 mm) layer of salt. Arrange the bacon pieces on top, 4″ (10 cm) square cuts.

Lay on finely chopped leeks, paprika, 1-2 bay leaves and salt on top. Place another layer of bacon and continue until out of ingredients.

Pour on water to cover it and press down with a stone. Store in a cold area.find similar recipes here
