Shape small oval meatballs, dice the potatoes into large cubes. Cut the mushrooms into thin strips, the roasted red peppers into coarse pieces.
Pour a little oil into each clay pot, a little of the potatoes, onions, mushrooms, peppers and the meatballs on top.
Mix the tomato juice, water and tomato paste, pour equal amounts into each clay pot. Bake in a moderate oven about 1 hour, then sprinkle with parsley before serving.
