Mash the spices and garlic in a mortar and pestle. Add the vinegar and water. Stir the marinade well.
Cut the pork ribs into medium-sized pieces and smear them with the marinade well. Transfer to a bowl and cover with foil. Leave in the fridge for a few hours.
An hour before grilling, take out of the fridge. Heat the barbecue well and smear it with a little oil. Salt the ribs a bit more if needed and grill until ready.
