Clean and wash the chanterelles very well, to remove any sand or dirt on them.
Bring water to a boil, put a little salt in it and add the mushrooms to boil about 15 min.
Strain the cooked mushrooms and chop them into small pieces. Put into jars, each having 1 bay leaf, several grains black pepper, salt, oil and 1/2 cup vinegar.
Top the jars off with water, close with caps and boil for at least 1 hour.
