Wash and then cut off the ends of the zucchini. Cut them in 2 lengthwise and use a spoon to scoop out their insides.
For the stuffing: Peel the onions and carrots. Chop the onions finely, grate the carrots. Chop the insides of the zucchini, grate the tomato.
Put a little oil or olive oil to heat up on the stove. Pour the onions into the heated oil. Braise until they gain a transparent color, add the mince to them.
Using a wooden stirrer or fork, tear the mince to small pieces, add to it the grated tomato, carrot, zucchini insides, salt, paprika and finally the cleaned rice. Leave for a few more min. and take the stuffing off the stove.
Arrange the zucchini halves in a tray, fill them with the stuffing. If you have any mixture left, distribute it into the tray, add a little water and bake in a preheated 392°F (200 °C) oven.
Bake about 1 hour (until stuffing is ready and zucchini soften). Shortly before turning the oven off add the grated cheese over the zucchini. Return to the oven and turn it off.
