Cut the washed zucchini into pieces about 1 1/2″ (4 cm) thick. Scoop out the insides but not all the way through. Salt, arrange in a tray and bake 15-20 min. at 356°F (180 °C).
In the meantime, braise the mince, finally season with paprika. Fill the zucchini with the braised mince, grate cheese on top and return to the oven briefly. Stir the yoghurt with a pinch of salt.
Arrange the zucchini in a plate, sprinkle grated cheese lightly on top, add the yoghurt, sprinkle finely chopped parsley and ketchup as the final touches.
