Northern-Style Stuffed Peppers with Beans

  • bean - 1 2/3 cups (400 g) canned
  • peppers - 5 - 6 fresh (red)
  • onions - 1 head
  • oil - 3 1/3 tbsp (50 ml)
  • paprika - 1 tablespoon
  • savory - 1 pinch
  • spearmint - 1 pinch
  • black pepper - to taste
  • salt - to taste
  • flour - to seal the peppers' opening


Wash and strain the beans very well. Pour the greater part of the oil in a pan and heat it, add the finely chopped onions, spices and pinch of salt, braise until the onions soften.

Add the paprika, stir and immediately add the beans, salt to taste. Braise briefly while stirring nonstop and remove pan from the heat.

Leave the stuffing to cool, then fill the peppers. Smear a tray with the remaining oil, dip the opening of each pepper in flour to seal in the stuffing.

Arrange the peppers in the tray, sprinkle well with some flour. This procedure is only done when the peppers aren't dried; during baking they'll obtain a dried pepper taste because of the oil and flour.

Place the tray in a preheated 356°F (180 °C) oven and bake to the desired crisp. Amazing peppers with bean stuffing - tasty, aromatic, melt-in-your mouth.
