Put the amount of gelatin required to gel 2 cups (500 ml) liquid to dissolve in a little water. In a water bath over low heat, beat the yolks with the sugar and add the wine, juice and rind of the orange and lemon.
Remove the cream from the heat and dissolve the gelatin in it. Move the pot with the cream to a bowl with ice and stir until cooled. Once cool, gently stir with the pre- beaten unsweetened cream.
Distribute the wine cream dessert into cups and place them in the refrigerator. Make decorations as desired.
