Tenderize the pork neck steaks lightly and make cuts along the edges, so the meat doesn't shrink during baking.
Season the steaks with salt and black pepper. Mix the pressed garlic, honey, soy sauce, squeezed out lemon juice, the beer and rosemary (rosemary is optional due to the strong aroma) in a deep bowl with a lid.
Sprinkle olive oil on top and leave the steaks to season overnight.
The next day, cook them on the grill or barbecue.
