Beat eggs with a mixer, gradually pour half the milk in. Then gradually add the flour mixed with baking powder. Add the olive oil, oregano, half of the garlic and salt. Add 1-2 tablespoons of the flour, and add more milk until well mixed. (The dough needs to be thicker than pancake batter).
Allow to rest 5 to 10 minutes. Prepare the topping by mixing the tomato paste in a bowl with the remaining 1/2 of the garlic, chopped pickles, wine, brine and savory. In a pre-heated waffle maker, place dough and bake each serving for 5 minutes.
Arrange the ready waffles in a baking dish, distribute the topping, place pieces of cheese on top. You can sprinkle on some savory, add bacon, mushrooms and other products of your choice. Bake about 10 minutes in a preheated 428°F (220°C) oven.
